Creamy Coconut Mojito – a new twist on an old favorite!
This is a twist on the Coconut Mojito, which I just love. I replaced some of the coconut water with cream of coconut and oh what a difference! This luscious mojito will keep you coming back for more!

Whether it be at the lake, beach, by the pool or a family cookout, this Creamy Coconut Mojito cocktail will cool you off and chill you out!

Ingredients that you’ll need to make a Creamy Coconut Mojito cocktail

You’ll need two types of Rum, plain and coconut flavored. For an all-around good Rum, you can try Brugal, it is one of my favorites. There are many coconut flavored rums but I was introduced to the Blue Chair Bay while I was in the BVIs. Finally you’ll need lime juice, coconut water, cream of coconut, simple syrup, limes and mint.

Martini or cocktail, I find that a good shake makes all the difference in the world. I have at least a dozen shakers but this one from OXO is by far my favorite. It doesn’t leak, and the cap is a measuring cup that will measure from 1/2 ounce to 1.5 ounces. And it is dishwasher safe! You can’t go wrong with OXO.

And don’t forget the glasses. This drink is meant to be enjoyed outside in the beautiful summer weather. You don’t want to take glass on the boat or by the pool so these 20 ounce acrylic glasses (shown above) are perfect for any outdoor occasion. Keep in mind that you can put a ‘double’, 2 portions of the Creamy Coconut Mojito in the 20-ounce glass. If you are looking for a single serving, the 15 ounce acrylic glasses (shown below) are a better choice. Remember, add lots of ice!

Creamy Coconut Mojito Cocktail Directions
Muddle the mint leaves, lime wedges and simple syrup in a cocktail shaker, just long enough to release the minty flavor. Add the coconut water, cream of coconut, rums and lime juice to the shaker. Shake to combine. Fill the glasses with ice, then pour in strained liquid, dividing evenly. Top with club soda and stir. Garnish with mint leaves.

Creamy Coconut Mojito
Ingredients
- 6 Mint leaves
- 1 Lime Cut into 6 wedges
- 1 Tablespoon Simple Syrup
- 2 Tablespoons Lime Juice You can use fresh squeezed lime juice or ReaLime
- 6 Ounces Coconut water
- 1.5 Ounces Cream of Coconut
- 2 Ounces White Rum
- 4 Ounces Coconut Rum
- Club Soda
- Mint sprigs for garnish
Instructions
- Muddle the mint leaves, 3 lime wedges and simple syrup in a cocktail shaker, just long enough to release the minty flavor
- Add the coconut water, cream of coconut, rums and lime juice to the shaker
- Shake to combine
- Fill the glasses with ice, then pour in strained liquid, dividing evenly
- Top with club soda and stir
- Garnish with lime wedges and more mint leaves
