The Lavender Vodka Cocktail Endless Summer: Winter Blues got you Down?
There’s something about summer drinks that just hits differently—the sun, the breeze, and a cocktail that feels like it belongs right there in the moment. Enter the “Endless Summer” cocktail—a delightful mix of vodka with the floral sweetness of lavender syrup.
While I was staying at Scrub Island in the British Virgin Islands, I hired a guide to take me around to a few nearby islands so I could highlight some of the best cocktails in the BVIs for my blog. One of our stops was Cooper Island Beach Club, where a bartender named Saturn showed me how to make their “Endless Summer” cocktail.

It’s a simple mix of vodka and lavender syrup, but don’t let that fool you. The lavender syrup is infused with that soft floral flavor that instantly reminds you of warm afternoons and island gardens. Light, a little sweet, and super refreshing—basically everything you want when you’re sipping something beachside.
Honestly, when Saturn first told me what was in it, I wasn’t expecting much. It sounded almost too simple to be memorable. But after one sip, I was completely sold. It’s now one of those easy BVI-inspired drinks I come back to all the time.

Endless Summer Island Cocktail Ingredients

- Vodka
- Monin Lavender Syrup
- Lime Juice
- Club Soda
Tips
Use good quality spirits. The better the ingredients, the better your cocktail will taste. I like to use either Stoli (Stolichnaya), Absolut, or Ketel One vodka for mixed drinks. They are good-quality, mid-priced vodkas.
Use freshly squeezed lime juice for the best flavor, bottled juice doesn’t compare. But when you forget to buy the limes, bottled will have to do.

Cooper Island was out of lavender syrup, so Saturn replaced the lavender with blueberry syrup. The drink tastes fabulous either way.

How to Make an Endless Summer

Add the vodka, lavender syrup, and lime juice to a shaker half full of ice.
Gently shake then pour the strained ingredients into a tall glass of crushed ice.
Top off the cocktail with club soda.
Garnish with a lavender sprig and a lime.

- Fill a tall glass with crushed ice.
