- Gelatine

Tips
Use bottled lime juice for convenience—it tastes great in the Mojito Jello Shot recipe.
Be careful if adding a fresh mint leaf to the jello cup. Even when placed in the jello before chilling, the mint leaf will turn brown within 12 hours. Do this only if the Mojito Jello will be consumed soon after chilling.
Blueberries will remain fresh in the jello for up to 2 days.
Persian Limes are best for garnishing jello shots. Their smaller size makes them a perfect fit.

To make your jello shots, you’ll need jello shot cups. Click here to learn the differences between the 3 different styles of jello shot cups. I use the squeezable Jello Shot cups, the flat round Jello Shot cups above, and the square Jello Shot cups in the main photo.
The second most important item is a large, spouted mixing bowl with a handle. This bowl makes pouring the liquid into the jello shot cups easy. I have seen ‘tools’ on Amazon that assist you with filling your jello shot cups, but the bowl with the spout works well. Of course, you may have a few drips here and there, but I need more to invest in one of those tools.
How to Make Mojito Jello Shots
Place 16 jello shot cups on a baking sheet.
Pour the rum into the spouted mixing bowl and sprinkle the gelatin on top. Gelatin can be tricky to work with when using it the first time. The secret is to ‘slowly’ sprinkle the gelatin on top of the liquid. If you see it clumping up, you are spreading it too quickly.
Let the gelatin mixture sit for 7 minutes. If you do have some dry patches, don’t worry. Ensure your water is boiling for the next step.

In the meantime, boil the water.
Add the water to the gelatin mixture and stir for 3 minutes.
Then add the lime juice and mint simple syrup, stirring well.
Slowly pour the mixture into your jello shot cups until 3/4 full.
Refrigerate the Mojito Jello Shots for 2 hours before placing the lids on the cups. Jello shots can be made 2 days in advance and refrigerated until ready to serve.

Garnishing Mojito Jello Shots (Optional)
If you’re thinking about going all out with the presentation, garnishing Mojito Jello Shots with lime slices and fresh mint makes them look amazing—perfect for photos and impressing your guests. But keep in mind that those pretty little touches can take some time.
Garnishing a whole batch can take 45 minutes to an hour, and unfortunately, the mint starts to brown within a few hours. So, if you decide to garnish, do it right before serving and eat them soon after.
It’s okay not to spend time garnishing the jello shots; they are awesome without all that glam.
Blueberry Mojito Jello Shots
To make Blueberry Mojito Jello Shots, reduce the mint simple syrup to 1/2 cup and add 1/4 cup of blueberry syrup. Add 4-5 blueberries to each jello shot cup to garnish before chilling. That’s it! The blueberries add a little burst of flavor and turn these into something even more special.

Mojito Jello Shots
- 1 Cup White Rum
- 3/4 Cup ReaLime Juice Bottled Lime Juice
- 3/4 Cup Mint Simple Syrup
- 2 Envelopes Knox Gelatine 1 box contains 4 envelopes of gelatin
- 1/2 Cup Boiling Water
- Optional: Lime and Mint Leaves for Garnish
Blueberry Mojito Jello Shots Optional
- 1/4 Cup Blueberry Syrup
- Blueberries for Garnish
Instructions
- Place 16 – 2-ounce Jello Shot cups on a baking sheet.
- Add the rum to a large, spouted mixing bowl.
- Slowly sprinkle the gelatin on top of the rum, making sure to sprinkle it evenly across the top of the liquid
- Let the gelatin absorb the liquid for 7 minutes.
- In the meantime, boil the water.
- Add the water to the gelatin mixture and stir until the gelatin is dissolved, approximately 3 minutes.
- Add the lime juice and mint simple syrup and stir well.
- Pour the mixture into Jello Shot cups until they are 3/4 full.
- Refrigerate at least 2 hours before placing the caps on the Jello Shot cups.
- Serve Chilled. Can be made 2 days in advance.
