But if I’m mixing a champagne cocktail, I tend to stay under $15 a bottle. Sweet champagnes are my preference, but until recently, I didn’t know Brut meant unsweet and Extra Dry sweet. As you can see from the photo, I settled on Korbel Extra Dry.
Prosecco makes an excellent substitution for champagne in cocktails.
For a sweeter cocktail use 1/2 ounce of pineapple juice.

How to Make a Pineapple Upside Down Champagne
Start by chilling your champagne thoroughly. A well-chilled base will enhance the overall experience of your cocktail.
Pour the pineapple and cranberry juices into a chilled champagne flute.
Top it off with no more than 5 ounces of champagne and stir gently.
Add a cherry for garnish.
Note
It would be best if you had champagne flutes that are 8 ounces or less. The larger the champagne flute, the less the recipe will fill your glass. More champagne also changes the taste of the cocktail.
