Scrubslide Recipe (Scrub Island’s Famous Tropical Cocktail)
While visiting the breathtaking British Virgin Islands, I discovered one of my favorite vacation cocktails—the Scrubslide. This creamy tropical cocktail from Scrub Island combines Captain Morgan Spiced Rum, Kahlúa, amaretto, vodka, and cream of coconut into a rich, island-inspired drink that’s surprisingly easy to recreate at home.
During my stay at Scrub Island, I wanted to find a signature cocktail that would always remind me of this beautiful Caribbean destination. One late morning, I headed to the pool bar and introduced myself to the bartender, Stacy. Looking to sample a few of the resort’s house specialties, I ordered both the Scrubslide and the Scrub Island Spiced Tea. After one sip, I knew the Scrubslide would become the drink I’d forever associate with this island paradise.

The Scrubslide is more than just a cocktail—it’s an experience. Captain Morgan Spiced Rum adds warm vanilla spice, Kahlúa contributes rich coffee notes, amaretto brings a subtle almond sweetness, vodka smooths the finish, and cream of coconut ties everything together into a velvety, tropical cocktail that’s both decadent and refreshing.

Choose Quality Ingredients: Use good quality spirits. The better the ingredients, the better your cocktail will taste.
Best Cream of Coconut: I typically buy the Goya cream of coconut in the international section of my grocery store. Goya is less expensive than the coconut cream you would find in the drink mix section of the store.

How to Make the Scrubslide
When first opened, the coconut cream will be separated in the can. I pour it into a small-sized bowl and whisk until combined and smooth. The coconut cream can be refrigerated and kept for a week.
Add the Captain Morgan Spiced Rum, vodka, Kahlua Coffee Flavored Liqueur, amaretto, and cream of coconut to a blender with 1.5 cups of ice.
Blend until creamy, approximately 45 – 60 seconds.
Drizzle the chocolate syrup into a tall glass.
Pour the ingredients into the glass, add whipped cream, a straw, sprinkle some nutmeg, and top with a cherry.
No Blender, No Problem
Drizzle the chocolate syrup into a tall glass, then fill it with crushed ice.
Add the Captain Morgan Spiced Rum, vodka, Kahlua Coffee Flavored Liqueur, amaretto, and cream of coconut to a shaker half full of ice.
Shake the shaker vigorously for 15 seconds.
Pour the strained ingredients into the glass. Top your drink with whipped cream, a straw, sprinkle some nutmeg, and garnish with a cherry.

- 1 Cocktail Shaker Optional
Ingredients
- 1.5 Ounces Captain Morgan Spiced Rum
- 1.5 Ounces Kahlua
- 1.5 Ounces Amaretto
- 1.5 Ounces Vodka
- 1.5 Ounces Cream of Coconut
- 1.5 Cups Ice
- Chocolate Syrup, Whipped Cream, Ground Nutmeg & Maraschino Cherry for garnish Optional
Instructions
- Open the coconut cream and pour it into a small sized bowl. Whisk the coconut cream until combined.
- Add the Captain Morgan Spiced Rum, Kahlua, amaretto, vodka, cream of coconut, and ice to a blender.
- Secure the blender top and blend for approximately 45 – 60 seconds.
- Drizzle the chocolate syrup into a tall glass.
- Pour the ingredients from the blender into the glass.
- Add whipped cream, ground nutmeg and a cherry on top.
