While checking out the British Virgin Islands my ‘home base’ was at the Scrub Island Resort, Spa & Marina. It was a charming place, with 52 guest accommodations; 10 luxury villas; and a 55-slip marina.
One morning I headed up to the pool bar early enough that the Bartender was still setting up for the day. I wanted to taste and photograph a couple of the tropical cocktail house specialties, so I introduced myself to Stacy, the Bartender. I ordered 3 drinks from the menu that caught my attention: the Scrubslide, Basil Shores and Scrub Island Spiced Tea.
When I ordered the 3 drinks, Stacy asked me if I was going to drink all of them?! I told her not to worry, my plan was to taste and photograph the tropical cocktails. I then explained to her that I had a blog and wanted to highlight exotic cocktails of the BVIs. At that point Stacy suggested that I try a drink she created, the Blue Passion. It was everything an exotic tropical cocktail should be!
This exotic cocktail Blue Passion is easy to make and one of the best tasting drinks at Scrub Island. You just add Absolut, Hpnotiq, Blue Curacao, Passion Fruit and Pineapple to a shaker filled with ice. Shake for 15 seconds and pour into a tall glass filled with ice. If you don’t have a good shaker, try this one from OXO.
Thank you, Stacy, for suggesting such a great tropical cocktail and of course, for being so gracious and mixing up all of my drinks before you were even setup and ready for business.
