Ingredients you’ll need to make College Football Pumpkin Spice Jello Shots

  • Pumpkin Vodka
  • Pumpkin Spice Liqueur
  • Simple Syrup
  • Sweetened Condensed Milk
  • Gelatine
  • .5 ounces of Gel Food Color in your team’s two colors. If one color is white, then no need to purchase white.

Tips

For flavored vodkas I like both Veil and Pinnacle, they are both reasonably priced.

If one of your Team’s colors is red, use 1.5 teaspoons of gel food color instead of 1 teaspoon.

To make your Jello Shots, you’ll need Jello Shot cups. Click here to learn the differences between the 3 different styles of Jello Shot cups. I use the squeezable Jello Shot cups (first photo in post), the flat round Jello Shot cups below, and the square Jello Shot cups.

The second most important item is a large, spouted mixing bowl with a handle. This bowl makes pouring the liquid into the Jello Shot cups easy. I have seen ‘tools’ on Amazon that assist you with filling your Jello Shot cups, but the bowl with the spout works well. Of course, you may have a few drips here and there, but I need more to invest in one of those tools.

How to make Pumpkin Spice Jello Shots for a TRUE College Football Fan

First, place 26 Jello Shot cups on a baking sheet.

To Make the First Team Color

Pour the Pumpkin Vodka, Pumpkin Spice liqueur, and simple syrup into the spouted mixing bowl and sprinkle the gelatin on the top. Gelatin can be tricky to work with when using it the first time. The secret is to ‘slowly’ sprinkle the Gelatin on top of the liquid. If you see it clumping up, you are spreading it too quickly.

Let the gelatin mixture sit for 7 minutes. If you do have some dry patches, don’t worry. Ensure your water is boiling for the next step.

In the meantime, boil the water. Add the first Team color (gel food coloring) to the boiling water and stir until combined.

Then, pour the water with the gel food color to the gelatin mixture and stir for 3 minutes.

Add the sweetened condensed milk and stir until combined well.

Slowly pour the mixture into your Jello Shot cups until they are half full.

Refrigerate for 1 hour before starting the top layer.

To Make the Second Team Color

Pour the Pumpkin Vodka, Pumpkin Spice liqueur, and simple syrup into the spouted mixing bowl and sprinkle the gelatin on the top.

Let the gelatin mixture sit for 7 minutes.

In the meantime, boil the water. This time, use your second team’s Gel Food Color and add it to the boiling water, stirring until combined. If your second team’s color is white, there is no need to add any food color.

Then, pour the water and food coloring mixture into the gelatin mixture and stir for 3 minutes.

Add the sweetened condensed milk and stir until combined well.

Let the mixture cool for 10 minutes. Then stir.

Top off the Jello cups with your second color and refrigerate for 2 hours before placing the lids on the cups. Jello Shots can be made 2 days in advance and kept chilled.

  • 1 1/4 Cup Pumpkin Vodka
  • 1/4 Cup Pumpkin Spice Liqueur
  • 1/4 Cup Simple Syrup
  • 2 Envelopes gelatin
  • 1 Cup Boiling Water
  • 1/4 Cup Sweetened Condensed Milk
  • 1 Teaspoon Gel Food Coloring Team Color 2

Instructions
 

First Team Color

  • Place 26 – 2 oz Jello-Shot cups on a baking sheet
  • Pour the pumpkin Vodka, pumpkin liqueur, and simple syrup into a large, spouted mixing bowl
  • Slowly sprinkle gelatin on top of the vodka and pumpkin liqueur mixture making sure to sprinkle it evenly across the top of the liquid
  • Let the gelatin absorb the liquid for 7 minutes
  • In the meantime boil the water
  • Pour 1 cup of the boiling water into a measuring cup
  • Add the gel food color (if making white you do not have to add food color) to the boiling water and stir well
  • Add the water mixed with the food coloring to the Gelatin mix and stir until the Gelatin is dissolved, at least 3 minutes
  • Now add the sweetened condensed milk and stir well
  • Pour mixture into the Jello-Shot cups until they are 1/2 full
  • Refrigerate the 1/2 full Jello-Shot cups at least 1 hour before starting the top layer

Second Team Color

  • Pour the pumpkin Vodka, pumpkin liqueur, and simple syrup into a large, spouted mixing bowl
  • Slowly sprinkle gelatin on top of the vodka and pumpkin liqueur making sure to sprinkle it evenly across the top of the liquid
  • Let the gelatin absorb the liquid for 7 minutes
  • In the meantime boil the water
  • Pour 1 cup of the boiling water into a measuring cup
  • Add the gel food color (if making white you do not have to add food coloring) to the boiling water and stir well
  • Add the water mixed with the food coloring to the Gelatin mix and stir until the Gelatin is dissolved, at least 3 minutes
  • Now add the sweetened condensed milk and stir well
  • Let the mixture cool for 10 minutes then stir
  • Top off the refrigerated Jello-shots with the second Team color
  • Refrigerate at least 2 hours before placing the caps on the Jello-Shot cups
  • Serve Chilled. Can be made 2 days in advance and kept in the refrigerator

Notes

Gelatin can be tricky to work with the first time you use it in a recipe. The secret is to ‘slowly‘ sprinkle the gelatin on top of the liquid. If you see it is clumping up, you are sprinkling too quickly. If you have some dry patches, don’t worry; ensure your water is boiling before adding it to the gelatin mixture and stir until the clumps are dissolved. 
If you want a darker color, add a tablespoon of hot water and 1/4 teaspoon of gel food color to a small bowl and stir until combined. Then add the food coloring mixture to your gelatin mixture and mix well.
