For best results, I prefer using Thai Kitchen canned coconut milk, as it has very little coconut fat separation, making it easier to work with and more consistent for cocktail recipes.

To avoid this, pulse the coconut flakes in a small food chopper, such as a mini Cuisinart, until they are finer and lighter. The smaller pieces sit more easily on the whipped cream, creating a better balance and a more polished finish while still adding that extra touch of coconut flavor.
How to Fix Separated Coconut Milk for Cocktails
If your can of coconut milk has the coconut fat settling at the top, pour the coconut milk into a small bowl and whisk until thoroughly combined—using a handheld milk frother works just as well and can speed things up. This quick step helps bring the coconut milk back together before adding it to your recipe.

- 20 Ounces Coconut Rum
- 15 Ounces White Chocolate Liqueur
- 15 Ounces Unsweetened Coconut Milk
- 1 – 13 Ounce Can Reddi-Wip
- 1 – 14 Ounce Bag Sweetened Flaked Coconut
Depending on the size of your martini glasses, this recipe will make 10-12 martinis.
You can make them 1 day in advance and keep them chilled until ready to serve.
I store my pre-made martinis in a plastic carafe with a leak-proof top. This way, I can lay the carafe down in the refrigerator if necessary or put it in an ice bucket on my bar.
When ready to serve, shake vigorously, pour, and garnish.
