The second most important item is a large, spouted mixing bowl with a handle. This bowl makes pouring the liquid into the Jello Shot cups easy. I have seen ‘tools’ on Amazon that assist you with filling your Jello Shot cups, but the bowl with the spout works well. Of course, you may have a few drips here and there, but I need more to invest in one of those tools.

How to Make Pumpkin Spice Jello Shots

First, place 26 Jello Shot cups on a baking sheet.

To Make the First Team Color

Pour the Pumpkin Vodka into the spouted mixing bowl and sprinkle the gelatin on top of the vodka. Gelatin can be tricky to work with when using it the first time. The secret is to ‘slowly’ sprinkle the gelatin on top of the liquid. If you see it clumping up, you are spreading it too quickly.

Let the gelatin mixture sit for 7 minutes.

In the meantime, simmer the water. Add the first gel food coloring to the simmering water and stir until combined.

Then, pour the water with the gel food coloring into the gelatin mixture and stir for 3 minutes.

Add the RumChata and simple syrup to the mixture and stir until combined well.

Slowly pour the mixture into your Jello Shot cups until they are half full.

Refrigerate for 1 hour before starting the top layer.

To Make the Second Team Color

Pour the Pumpkin Vodka into the spouted mixing bowl and sprinkle the gelatin on top of the vodka.

Let the gelatin mixture sit for 7 minutes.

In the meantime, simmer the water. This time, use the second gel food coloring and add it to the simmering water, stirring until combined. Note: If your second color is white, there is no need to add any food coloring.

Then, pour the water and food coloring mixture into the gelatin mixture and stir for 3 minutes.

Add the RumChata and simple syrup to the mixture and stir until combined well.

Let the mixture cool for 10 minutes. Then stir.

Top off the Jello cups with your second color and refrigerate for 3 hours before placing the lids on the cups. Jello Shots can be made 2 days in advance and kept chilled.

Ingredients
  

Shopping List

  • 1 375 ml Pumpkin Vodka 375 ml Bottle = 1.5 cups. Enough for the bottom and top layer
  • 1 375 ml RumChata 375 ml Bottle = 1.5 cups. Enough for the bottom and top layer
  • 1 12 oz Bottle of Simple Syrup
  • 1 1 oz Box of Knox Gelatine The box contains 4 envelopes of gelatin
  • 2 .7 oz Gel Food Coloring One for each Team color

To Make the First Team Color

  • 3/4 Cup Pumpkin Vodka
  • 3/4 Cup RumChata
  • 2 Envelopes Gelatin
  • 1 Cup Water
  • 1/2 Cup Simple Syrup
  • 1/2 Teaspoon Gel Food Coloring Team Color 1

To Make the Second Team Color

  • 3/4 Cup Pumpkin Vodka
  • 3/4 Cup RumChata
  • 2 Envelopes Gelatin
  • 1 Cup Water
  • 1/2 Cup Simple Syrup
  • 1/2 Teaspoon Gel Food Coloring Team Color 2

Instructions
 

First Team Color

  • Place 26 – 2 oz Jello Shot cups on a baking sheet
  • Pour the Pumpkin Vodka into a large, spouted mixing bowl
  • Slowly sprinkle the gelatin on top of the vodka, making sure to sprinkle it evenly across the top of the liquid
  • Let the gelatin absorb the liquid for 7 minutes
  • In the meantime simmer the water
  • Pour 1 cup of the water into a measuring cup
  • Add the gel food coloring to the water and stir well
  • Add the water mixed with the food coloring to the gelatin mix and stir until the gelatin is dissolved, at least 3 minutes
  • Now add the RumChata and simple syrup and stir well
  • Pour the mixture into the Jello Shot cups until they are 1/2 full
  • Refrigerate the 1/2 full Jello Shot cups at least 1 hour before starting the top layer

Second Team Color

  • Pour the Pumpkin Vodka into a large, spouted mixing bowl
  • Slowly sprinkle the gelatin on top of the vodka, making sure to sprinkle it evenly across the top of the liquid
  • Let the gelatin absorb the liquid for 7 minutes
  • In the meantime simmer the water
  • Pour 1 cup of the simmering water into a measuring cup
  • Add the gel food coloring to the water and stir well. Note: If making a white layer you do not have to add food coloring
  • Add the water mixed with the food coloring to the gelatin mix and stir until the gelatin is dissolved, at least 3 minutes
  • Now add the RumChata and simple syrup and stir well
  • Let the mixture cool for 10 minutes then stir
  • Top off the refrigerated Jello Shots with the second color
  • Refrigerate at least 2 hours before placing the caps on the Jello Shot cups
  • Serve Chilled. Can be made 2 days in advance and kept in the refrigerator

Notes

If you want a darker color, add a tablespoon of hot water and 1/4 teaspoon of gel food coloring to a small bowl and stir until combined. Then, add the food coloring mixture to your gelatin mixture and mix well.
