Simply irresistible Tomato Bacon Sandwich Appetizer
This appetizer recipe is delicious and makes 60 bite size tomato sandwiches. It is a perfect complement to your other appetizers when hosting a party.

Ingredients that you’ll need to make the Tomato Bacon Sandwich appetizer

This recipe of Tomato Bacon Sandwiches uses just 5 ingredients, and the results are delicious. I buy the fully cooked bacon because I don’t want to mess up my kitchen cooking bacon from scratch. You can use a thick white bread and remove the crusts or choose the very thin whole wheat. My preference is the very thin whole wheat. There is no need to remove the crusts and the bread is healthier than white.
As for the tomatoes: you can buy 3 Beefsteak, or 5 medium sized tomatoes. At the time I was in the grocery store the Beefsteak tomatoes weren’t looking that good so I went with the medium sized ‘on the vine’ tomatoes.

I hate chopping so I use the Cuisinart Mini-Prep Plus Processor when chopping is required. It’s a great little gadget that comes in handy for many of my recipes.
How to make Tomato Bacon Sandwich Appetizers

Add the mayonnaise and mustard to a small bow. I used the OXO 1.5 quart mixing bowl with the rubber bottom and grip. Place the bacon strips in the Cuisinart Mini-Prep Plus Processor and chop until the bacon is minced, about 10 seconds.

Pour the chopped bacon into the bowl with the mayonnaise and mustard.

Stir until mixed well.

If your tomatoes are juicy, place them between sheets of paper towel to soak up the extra juice. Spread out the slices of bread. As you can see, I’m working with half of the bread to start.

Spread the mayonnaise mixture on one side of the bread slices. Once done arrange the tomatoes on 15 of the bread slices. If you are using Beefsteak tomatoes that will be 1 tomatoe per slice of bread. Since I am using smaller tomatoes I need to cut the tomatoes to fit the bread slice.

Once you have placed the tomatoes on 15 slices of bread, cover each tomatoe with a mayonnaised covered piece of bread and cut into 4 triangles with a serrated knife.

Place tomato sandwich triangles on a serving platter. They can be made 2 hours in advance and refrigerated.

- 1 Mini food processor
Ingredients
- 1 Package Precooked Bacon Chopped
- 1.5 Cups Mayonnaise
- 3 Tbsp Dijon Style Mustard
- 15 Thick Tomato Slices If you buy Beefsteak tomoates you'll need 3
- 30 Slices Thin White or Wheat Bread
Instructions
- Chop the bacon fine. I use my Cuisinart Mini-Prep Plus Processor
- In a bowl stir together the bacon, mayonnaise and the mustard.
- Spread the bacon mayonnaise on one side of each bread slice.
- Sandwich the tomatoes between the slices, and cut each sandwich into 4 triangles.
