Ingredients

  • 1 Package Precooked Bacon (Approximately 14 slices)
  • 1.5 Cups Mayonnaise
  • 3 Tbsp Dijon Style Mustard
  • 15 Thick Tomato Slices
  • 30 Slices Thin White or Wheat Bread

Instructions

  • Add the mayonnaise and mustard to a small bowl.
  • Place the bacon strips in a mini food processor and chop until finely minced, about 10 seconds.
  • Add the chopped bacon to the bowl with the mayonnaise and mustard, and stir until well combined.
  • If your tomatoes are especially juicy, place them between sheets of paper towel to absorb any excess moisture.
  • Lay out the bread slices and spread the mayonnaise mixture on one side of each slice. Arrange the tomatoes on half of the bread slices.
  • Top with the remaining bread slices, spread side down, to form sandwiches.
  • Using a serrated knife, cut each sandwich in half diagonally, then cut each half diagonally again to create four triangles.
  • Arrange on a serving platter and refrigerate until ready to serve. These can be made up to 2 hours in advance.
