Endless Summer
I found this tropical cocktail recipe the Endless Summer while I was traveling in the British Virgin Islands in 2021 during the pandemic. While in the BVIs I hired a guide to take me to some of the nearby islands because I wanted to showcase some of the best tasting drinks in the BVIs. My first stop was to the Cooper Island Beach Club and there a bartender named Saturn showed me how to make the Endless Summer. While making this tropical cocktail recipe, Saturn starts off with Tito’s Vodka but I had a bottle of Absolut opened so that’s what I used when I made this cocktail at home. He also uses fresh lime juice. I will sometimes use bottled lime juice if I’m in a hurry or don’t have any fresh limes.

Saturn also replaced the lavender syrup with blueberry syrup because they were out of lavender syrup at the time that I visited. If you look at the photo above, the first drink on the left is an Endless Summer with Blueberry syrup and the second from the left is an Endless Summer with lavender syrup. Try them both, you won’t be disappointed!

How to make an Endless Summer
Add the Vodka, Lavender or Blueberry Syrup and lime juice to a shaker filled half full of ice. Gently shake the tropical cocktail and pours it into a glass filled with crushed ice topping it off with some club soda. If you don’t have a good shaker, try this one from OXO. The Endless Summer was delicious!

I was able to find the Lavender syrup on here. It gives the drink quite a unique flavor that I absolutely love, and I have made the Endless Summer tropical cocktail recipe many times since coming home from the BVIs. Please note that when you use lavender syrup instead of blueberry syrup the drink will have a faint lilac color instead of the reddish hue from the blueberry syrup.

Cooper Island’s Endless Summer
Ingredients
- 1.5 Ounces Vodka Saturn is using Tito's, but Absolut, Stoli, and Findlandia tastes great
- 1 Ounce Lime juice I use Realime lime juice but you can also use fresh squeezed lime
- 1 Ounce Lavender Syrup You can replace the Lavender Syrup with Blueberry Syrup for another delicious, flavored drink
- Club Soda
- 1 Slice Lime for garnish
Instructions
- Add ice to a shaker
- Add vodka, lavender syrup and lime juice to the shaker and shake gently for 5 seconds
- Fill a tall glass with crushed ice
- Pour the strained shaker ingredients into the tall glass with ice
- Top off with club soda
- Garnish with lime and add lavender (if you have a plant in your garden) for garnish
