While checking out the British Virgin Islands my ‘home base’ was the Scrub Island Resort, Spa & Marina. It was a charming place, with 52 guest accommodations; 10 luxury villas; and a 55 slip marina.

I headed up to the pool bar one late morning and I introduced myself to Stacy. I wanted to try a few of the house specialties so I ordered a number of drinks like the Scrubslide, Basil Shores and Scrub Island Spiced Tea.

To make this tropical cocktail the Basil Shores, blend cucumber and basil in a small food processor. When creating puree, I use this Cuisinart Mini Food Processor. Fill a shaker with ice and add the rum, peach puree, orange juice, lemon and cucumber basil puree. Shake for 15 seconds and pour into a glass with ice. If you don’t have a good shaker, try this one from OXO.

If you can’t find the Monin Peach Puree, you can purchase it here. Make sure you try the other great drinks from the pool bar: Scrub Island Spiced Tea and Scrubslide. And don’t forget Stacy’s house specialty, Blue Passion, my favorite by far.

Scrub Island Basil Shores

Basil Shores is made with Rum, peach puree, orange juice, lemon juice and cucumber and basil puree. The unique flavor of cucumber and basil in this tropical drink make it worth the extra time it takes to prepare.

Ingredients
  

Drink

  • 2 Ounces Bacardi Rum
  • 1 Ounce Peach puree
  • .5 Ounce Orange juice
  • .5 Ounce Lemon juice
  • 1 Ounce Cucumber Basil Puree Recipe below
  • Ice

Cucumber Basil Puree

  • 3.5 Inches Cucumber
  • 4 Basil leaves

Instructions
 

Cucumber Basil Puree

  • Peel the cucumber and cut off a 3.5 inch piece and cut into 4 pieces lengthwise
  • Use the peeler to remove the seeds from each piece and then cut each piece into 4
  • Add the pieces of cucumber and the basil to a mini food processor and blend for 15 seconds until pureed

Drink

  • Add the rum, peach puree, orange juice, lemon juice and cucumber basil puree to a shaker with ice
  • Shake for 5 seconds and then pour into a glass filled with ice

Notes

You can make the Cucumber Basil puree 2 days in advance and it’s enough to make 2 drinks.
