The Basil Shores – an awesome taste bud experience! A unique flavor of cucumber and basil, mixed with citrus and peach flavors; a tropical drink from the BVIs.
While checking out the British Virgin Islands my ‘home base’ was the Scrub Island Resort, Spa & Marina. It was a charming place, with 52 guest accommodations; 10 luxury villas; and a 55 slip marina.
I headed up to the pool bar one late morning and I introduced myself to Stacy. I wanted to try a few of the house specialties so I ordered a number of drinks like the Scrubslide, Basil Shores and Scrub Island Spiced Tea.

Ingredients you’ll need to make a Basil Shore
- White Rum
- Orange Juice
- Peach Puree
- Lemon Juice
- Fresh Basil

You can’t mix a great cocktail or martini without a great shaker. I have at least a dozen shakers, but one favorite. The shaker doesn’t leak; you won’t have to hit the shaker against the sink to get the top off, and the cap will measure from 1/2 to 1.5 ounces with clearly marked labels. Measure the perfect amount every time. And it is dishwasher safe!
How to make the Basil Shores
First, blend the cucumber and basil leaves in a small food processor. When creating puree, I use this Cuisinart Mini Food Processor.
Fill a shaker half full of ice and add the Rum, peach puree, orange juice, lemon and cucumber basil puree. Shake for 15 seconds and pour the strained ingredients into a glass with ice.

Scrub Island Basil Shores
- Mini food processor
- 2 Ounces Bacardi Rum
- 1 Ounce Peach puree
- .5 Ounce Orange juice
- .5 Ounce Lemon juice
- 1 Ounce Cucumber Basil Puree Recipe below
Cucumber Basil Puree
- 3.5 Inches Cucumber
- 4 Basil leaves
Cucumber Basil Puree
- Peel the cucumber and cut off a 3.5 inch piece and cut into 4 pieces lengthwise
- Use the peeler to remove the seeds from each piece and then cut each piece into 4
- Add the pieces of cucumber and the basil to a mini food processor and blend for 15 seconds until pureed
- Add the rum, peach puree, orange juice, lemon juice and cucumber basil puree to a shaker with ice
- Shake for 5 seconds and then pour into a glass filled with ice
